Our Story
Hello, I am Shailey. For my husband and I, being vegan is a way of life inspired by experiences and reinforced by the outcomes. In 2000, I was diagnosed with a late onset Type 1 diabetes, with the HbA1c of 12 at that time. Consequently, life, the way I knew it had to be reexamined and reconfigured. Food has always been a big part of my life. This new dimension forced me to look at food differently. After some personal research, countless consultations, numerous trials and errors, I found hope and promise in the plant based diet. However, I was not ready to give up my passion for food, cooking and entertaining. My husband's unwavering support and commitment kept me focused and determined to not only take charge of my health but to also resuscitate my love for food. Every special occasion, holidays, get-togethers, turned my kitchen into a test kitchen, and gave me an opportunity to adapt the traditional favorites into vegan temptations.
Then came 2020...it brought the entire planet to a screeching hault. We as humans were forced to reassess the trajectory of our civilization. Adaptability, strength and resilience of individuals, relationships, systems and organizations were put to test. I cooked more than ever during the lockdown. Love and appreciation from friends and family for the culinary experimantion kept the momentum going and encouraged me to expand the horizon by adapting more and more traditional dishes ranging from appetizers to curries, breads and desserts...and here we are in 2021!
